Inihaw na Liempo is grilled pork belly marinated in a mixture of crushed garlic, vinegar, salt and pepper. It is served with soy-vinegar or garlic-vinegar. It is called Inihaw in Luzon and Sinugba in the Visayan region.

Ingredients
- Inihaw na Liempo (Grilled Pork Belly)
- 6 pcs. pork belly slices (around 1/2 inch thick)
- 3/4 cup vinegar
- 1/2 cup cooking oil
- 1 tbsp minced thyme
- 3 cloves garlic, minced
- salt and pepper to taste
Instructions
- Whisk together the vinegar, cooking oil, thyme and garlic. Add salt and pepper to taste. Soak the pork slices in the mixture. Marinate the pork for 30 minutes.
- Heat a charcoal grill. Grill the pork slices for 10 to 12 minutes. Let it cool. Slice into strips. Best served with a side of mango ensalada.
